Matcha Pound Cake

Ingredients:
A pound cake tin 20 x 6 x 6cm
Pancake mix 150g
2 heaped teaspoons of matcha (about 4 to 5g)
Sugar 30g (or more if desired)
Milk 150ml
1 tablespoon of salad oil
1 bar of chocolate (about 50g)
Method:
1. Preheat the oven to 200C (392F).
2. Stir the matcha with just a little milk to make a smooth paste. Then, add the rest of the milk gradually, stirring until all the lumps have disappeared. 3. Add pancake mix, sugar and salad oil. Mix them well.
4. Cut the bar of chocolate into chunks. Add three quarters of cut chocolate into the mixture and mix them.
5. Grease the cake tin and/or line it with baking parchment.
6. Put the mixture into the cake tin.
7. Drop the tin from a height of 2 or 3cm in order to remove the air.
8. Add remaining chocolate on top of the mixture in the cake tin.
9. Put the tin into the oven and bake it at 200C (392F) for 25 minutes.
You can also try using marshmallows instead of chocolate. If you use marshmallows when baking the mixture, the surface of cake will be crisp.
Matcha ice cream
1. Leave vanilla ice cream (200ml) at room temperature for about 5 to 10 minutes to melt it a little.
2. Add a heaped teaspoon of matcha (about 2g) to the ice cream and mix them well. Then, chill the ice cream in the freezer.
*If you would like a stronger matcha flavor and a deeper color, add 2 heaped teaspoons of matcha (about 4g).
*Tea leaves contain caffeine. The diuretic, stimulant and anticancer effects of caffeine intake are clinically recognized. On the other hand, excessive intake of caffeine may have a damaging effect on health. Especially, pregnant or breastfeeding women, and children should be careful with the amount of caffeine they intake.
