Organic fukamushicha yogurt tart cake #

Ingredients (for cake mold diameter 18cm) :
2 heaped teaspoons of organic Fukamushicha (deep-steamed tea)
Hot water 400ml
Unsweetened yogurt: 400g
Biscuits 20 pieces (approximately 110g)
Salad oil 40ml
Milk 20ml
Gelatin powder 7g
Sugar 50-70g
Method:
1. Brew a strong tea using 2 teaspoons of fukamushicha (deep-steamed tea) leaves and 400ml of hot water, letting it steep for 7 minutes. Remove the tea leaves and let them drain.

2. Place the biscuits in a plastic bag and crush them into fine crumbs using a rolling pin.
3. Add the salad oil, milk, and 1/3 of the tea leaves to the biscuit crumbs. Mix thoroughly with your hands and lightly flatten with the rolling pin to make the tart crust.
4. Line a tart pan with parchment paper and evenly spread the tart crust using a rolling pin or spoon.
5. Bake in the middle of a preheated oven at 180°C (350°F) for 15-20 minutes, adjusting the baking time based on the crust’s color. Let it cool once baked.
6. Place the yogurt in a strainer and let it drain in the refrigerator for about 1-2 hours.
7. Mix 50-70g of sugar and the remaining tea leaves into the yogurt.
Adjust the sugar amount to your preferred sweetness.
8. In a small saucepan, combine 50ml of the drained yogurt liquid with 5g of gelatin powder.
Heat over low heat, without boiling, until the gelatin dissolves.
9. Mix the gelatin mixture into the yogurt thoroughly.
10. Pour the yogurt mixture into the cooled tart crust and refrigerate until set.
11. In a small saucepan, heat 70ml of deep-steamed tea over low heat and dissolve 2g of gelatin powder, without boiling.
Cool the tea with gelatin, then evenly pour it over the set yogurt layer. Refrigerate until completely chilled.
This cake doesn’t have a strong tea flavor due to the use of used tea leaves but has a lemon flavor.

The oven temperatures and times mentioned in this article are only a guide, so please adjust the temperature and time settings to match your specific oven and avoid overcooking or undercooking the food.
*Tea leaves contain caffeine. The diuretic, stimulant and anticancer effects of caffeine intake are clinically recognized. On the other hand, excessive intake of caffeine may have a damaging effect on health. Especially, pregnant or breastfeeding women, and children should be careful with the amount of caffeine they intake.
