Hojicha strawberry mint jelly

Ingredients (for 2 people) :
Hojicha tea leaves 2 teaspoons
Water 300ml
Gelatin powder: 5g
Lukewarm water 50ml
Sugar to taste
Mint leaves a few
Strawberries

Method:
1. Cut the strawberries into small pieces.
2. Dissolve the gelatin powder in 50ml of lukewarm water.
3. In a pot, bring 300ml of water and hojicha tea leaves to a boil. Let it simmer for a few minutes, then turn off the heat and add a few mint leaves. Allow it to cool. When making this as a jelly, it’s recommended to brew the hojicha strong and sweet.
4. Add the dissolved gelatin to the hojicha mixture and whisk until fully dissolved.
5. Remove the mint leaves from the hojicha.
*Mint leaves are removed to prevent discoloration due to heat.
6. Add the small pieces of strawberry to the hojicha mixture and refrigerate until set.

*Tea leaves contain caffeine. The diuretic, stimulant and anticancer effects of caffeine intake are clinically recognized. On the other hand, excessive intake of caffeine may have a damaging effect on health. Especially, pregnant or breastfeeding women, and children should be careful with the amount of caffeine they intake.
