Caprese using Fukamushicha used tea leaf and Tofu #

Time: 30 minutes or 1.5 hours

Ingredients (for 1 person) :
1 heaped teaspoon of organic fukamushicha (about 2g)
Fukamushicha is deep-steamed green tea.
300ml hot water


Tofu 150 to 200g
1 tomato

Dressing
2 tablespoons of olive oil
1.5 or 2 tablespoons of vinegar
1 teaspoon of sugar
1 pinch of salt

Method: 

1. Brew sencha tea, take out the used tea leaves and drain. Please refer to the article
How to brew Sencha (steamed green tea) on this site. Put aside the tea to drink later.
2. Sprinkle salt on both sides of the tofu.
3. Wrap the tofu with a piece of kitchen paper and place the tofu on a heat-resistant dish.
4. Heat the tofu at 600W for 3 minutes.
5. Take out the tofu and let it cool down.
*If you have time, heat the tofu at 600W for 2 minutes and weigh the tofu down, and leave it for about 1 hour to drain. If you do so, the tofu will not collapse its shape easily.
6. Dressing
Put the fukamushicha used tea leaves, olive oil, vinegar, sugar and salt in a small bowl, and stir it.
7. Slice the tofu into about 0.5cm thick.
8. Slice the tomato into about 0.5cm thick.
9. Place the sliced tomato and tofu alternately.

*Tea leaves contain caffeine. The diuretic, stimulant and anticancer effects of caffeine intake are clinically recognized. On the other hand, excessive intake of caffeine may have a damaging effect on health. Especially, pregnant or breastfeeding women, and children should be careful with the amount of caffeine they intake.
