History of Sayama tea
An old document mentions that tea was produced in around 830 AD.
The tea cultivated and produced in the Sayama hills of the Musashino Plateau was exported to America between the beginning of the Meiji period to the Showa Period.

Sayama tea
Saitama Prefecture is one of major tea production areas in Japan.
Tea is cultivated in Iruma City, Tokorozawa City, Sayama City on the Musashino Plateau and Chichibu area.
The Musashino Plateau is a layer of red soil formed by the accumulation of volcanic ash, has good drainage, and is suitable for tea cultivation.
Now the tea is cultivated and produced in Saitama Prefecture is called Sayama tea.

The characteristic of Sayama tea is that many tea farmers use the integrated system which includes cultivation, production and sales.

Sayama firing
Hire (火入れ)is firing tea leaves, the final process to refine tea leaves. Sayama hire is its own unique process. It takes time to slowly fire tea leaves at a low temperature. Because of this, Sayama tea has a unique aroma.

Kenzo Takabayashi, inventor of tea processing machines
Kenzo Takabayashi, who is known as the father of the modern tea industry in Japan, was born in 1832 in Saitama Prefecture.
While he was working as a doctor, he managed tea gardens and realized what hard work making tea by hand was. He invented many machines, such as for roasting, steaming rolling tea leaves, etc. after many years of effort.

Tea museum, Iruma City Museum ALIT
There is a corner of “The World of TEA” at the permanent exhibition room in Iruma City Museum ALIT. There are many exhibits related to Sayama tea, tea around the world. Visitors can learn about the history of tea, culture, customs, manufacturing method, etc.
There is a restaurant “茶処一煎 (Chadokoro Issen) on the premises of the museum, and you can drink Sayama tea and eat lunch and sweets made with Sayama tea.
