Xifu Longjing is one of the representative Chinese green teas. Tea leaves of Xifu Longjing are roasted while pressing them by hand in a cauldron. The shape of the tea leaves is flat and slender.

History:
The Classic of Tea (茶経 Chajing) written by Luyu (陸羽) (773-804) describes the tea, which was produced around Xi Hu (西湖 West Lake) in the Tang (唐) Dynasty (1644-1912). Tradition says that Longjing tea has been produced since the Ming (明) Dynasty (1368-1644) and the tea was presented to the Emperor during the Qing Dynasty (1644-1912).
