Fukamushicha is deep-steamed green tea.
*Simply using tea leaves, egg and mayonnaise alone is also good. Add salt and pepper to taste.

Ingredients (for 1 person):
1 heaped teaspoon of organically grown deep-steamed green tea leaves (about 2 to 3g)
200 to 250ml of hot water

2 slices of plain white or wholemeal bread
4 cherry tomatoes
30-40g shredded cheese
1 slice bacon
1 egg (small)
Mayonnaise
Salt and pepper

Method:
1. Preheat the oven to 250℃.
2. Brew sencha tea, take out the used tea leaves and drain. Please refer to the article
How to brew Sencha (steamed green tea) on this site. Put aside the tea to drink later.
3. Cut the cherry tomatoes in half and the bacon into 1cm wide pieces.
4. In a bowl, mix the tea leaves, cherry tomatoes, bacon, shredded cheese and mayonnaise, and add a sprinkle of salt and pepper.
5. Spread half of the mixture onto two slices of bread. Press the mixture down in the middle of one side of the bread and break the whole egg into the crater.
6. Put the tin into the oven and bake it at 250℃ for 10 minutes.
*In case of using a toaster, cook in the toaster oven on the medium temperature setting for about 6-8 minutes.

*Tea leaves contain caffeine. The diuretic, stimulant and anticancer effects of caffeine intake are clinically recognized. On the other hand, excessive intake of caffeine may have a damaging effect on health. Especially, pregnant or breastfeeding women, and children should be careful with the amount of caffeine they intake.
