Sautéed fish with organic used fukamushicha tea leaf cream sauce

Fukamushicha is deep-steamed green tea.

Ingredients (serves 2):
2 heaped teaspoons tea leaves of organically grown fukamushicha (about 4 to 5g)
500ml hot water

2 slices of white fish
Flour or potato starch
Salt and pepper
1 tablespoon salad oil or olive oil
40g cream cheese
2-3 tablespoons white wine
2-3 tablespoons milk
Mint or cherry tomatoes to serve

Method:
1. Brew sencha tea, take out the used tea leaves and drain. Please refer to the article
How to brew sencha (steamed green tea) on this site. Put aside the tea to drink later.
2. Lightly salt and pepper the fish on both sides.
3. Lightly coat the fish with flour or potato starch.
4. Without preheating the pan, place the white fish in the pan with salad or olive oil and cook over a low heat. For fillets with skin, place the fillets skin side down. Do not cover the frying pan.
5. When one side is cooked, flip the fillets.
6. Once both sides are cooked, remove the fish from the pan onto a small plate.
7. In the same pan, put the tea leaves, cream cheese, a pinch of salt, white wine and milk, and mix with a wooden spatula while heating over low heat.
8. Heat the contents of the pan for a few minutes until the ingredients are well mixed and thickened, then turn off the heat.
9. Spread the cream sauce on a plate and place the sautéed fish on top. Pour the remaining sauce over the fish. Garnish with mint leaves or cherry tomatoes.

*Tea leaves contain caffeine. The diuretic, stimulant and anticancer effects of caffeine intake are clinically recognized. On the other hand, excessive intake of caffeine may have a damaging effect on health. Especially, pregnant or breastfeeding women, and children should be careful with the amount of caffeine they intake.
