1 teaspoon (2-3g) organically grown sencha tea leaves
250ml water

20g grated cheese
1 tablespoon mayonnaise
1 pre-made puff pastry sheet (8 x 15cm)
If using frozen, put in the refrigerator for about 30 minutes, or let sit at room temperature for about 10 minutes to thaw soft.
beaten egg (optional)

Method:
1. Brew sencha in a teapot, take out the tea husks and drain the tea husks. Please refer to the article “How to brew sencha (ordinary steamed and deep steamed)” on the site.
2. Preheat the oven to 200 degrees C.
3. Put the tea leaves, cheese and mayonnaise into a bowl and mix thoroughly.

4. Spread half of the mixture onto the pastry sheet.

5. Roll up the pastry sheet away from you.

6. Tidy up the shape.

7. Cut the roll into 2-3cm pieces with kitchen scissors or a kitchen knife.
8. Line a baking tray with a cooking sheet and place the pastries onto it. (Optional: using a spoon or pastry brush, apply a little beaten egg to the surface of each pastry.)

9. Bake in the middle of the oven for about 18-20 minutes. *Tea leaves contain caffeine. The diuretic, stimulant and anticancer effects of caffeine intake are clinically recognized. On the other hand, excessive intake of caffeine may have a damaging effect on health. Especially, pregnant or breastfeeding women, and children should be careful with the amount of caffeine they intake.
