Organic sencha used tea leaf pound cake

Sencha is lightly or medium-steamed green tea.
Ingredients (for cake mold diameter 18cm):
3 teaspoons of organic sencha tea leaves
Water
200g pancake mix
30–50g sugar (adjust to your preferred sweetness)
1–2 eggs
60ml milk
60ml salad oil
Lemon
1 serving of store-bought vanilla ice cream
About 10 green tea candies
Method:
Organic sencha used tea leaf pound cake
1. Preheat the oven to 180°C (356°F).
2. Prepare cold-brew sencha by placing 3 teaspoons of tea leaves and water in a large filter-in bottle (750ml). Refrigerate for a few hours.
3. Remove the used tea leaves from the bottle, squeeze out excess water, and mix them with lemon juice. Drink the brewed tea.
4. Place green tea candies in a Ziploc bag, cover with a cloth on a cutting board, and crush the candies using a rolling pin or hammer.
5. In a bowl, crack the eggs, then add milk, salad oil, and sugar. Mix well. Add 200g pancake mix, 4-5 teaspoons of the used tea leaves, and the crushed candies. Mix everything together.
6. Grease the inside of the cake mold with salad oil.
7. Pour the batter into the cake mold. Drop the mold from a height of about 5cm onto a cutting board three times to remove air bubbles from the batter.
8. Bake in the preheated oven at 180°C for about 30 minutes. Check if the cake is fully baked by inserting a bamboo skewer; if it comes out clean, the cake is done.
*This cake and ice cream don’t have a strong tea flavor, but it’s an eco-friendly recipe using tea leaves.
Vanilla ice cream with organic sencha used tea leaf
1. Mix 1 teaspoon of squeezed and drained organic sencha used tea leaves with crushed green tea candies (about 3 pieces) into vanilla ice cream.
