French onion soup using Three-year aged bancha

Sannenbancha 三年番茶 is three-year aged bancha.

Ingredients (for 2 people) :
3 heaped teaspoons of sannen-bancha (three-year aged bancha)
700ml of hot water

100g onion (half a large size onion or one small size onion)
40g bacon
100g shredded cheese
3 to 4 tablespoons olive oil
4 slices baguette
1 clove garlic
Salt and pepper
The size of the heat-resistant bowl used in this recipe: 300ml

Method:
1. Brew sannen-bancha
Put the tea leaves into a teapot, and pour boiling water into the teapot. Brew it for 3 minutes. Strain the tea into a container, separate from the tea leaves.

2. Mince the garlic, peel and slice the onion thinly, and cut the bacon.

3. Heat the olive oil and the minced garlic on medium heat.

4. Add the onions and the bacon, and cook them, stirring often so as not to scorch, until the onions are softened and become browned. This should take about 15 to 20 minutes.

5. Add 600ml of the tea and simmer it for about 5 minutes. Adjust the taste with salt and pepper.

6. Put 1 or 2 slices of toasted baguette into heat-resistant bowls.

7. Ladle the soup into the bowls and pile the cheese on the baguette.


8. Bake in the center of the oven, preheated to 200C, for about 10 to 20 minutes until the cheese is slightly browned.

Used tea leaves of organic fukamushicha on top of the cheese.
Fukamushicha is deep-steamed green tea.

It is also good to eat the onion soup without the cheese and the baguette.
